Where do you post the weekly schedule?+
Right here — the "Find the truck" section above updates every Sunday night with the week's stops. We mirror it on Instagram, but this page is the source of truth.
Can I order ahead?+
Not yet. It's one truck and one window, and pre-orders would eat the line alive. Show up early — the schedule tells you exactly where we'll be.
Do you really sell out?+
Yes, most days. Brisket goes on the smoker 14 hours before service, so what's on the truck is all there is. When a meat 86's, we post it on Instagram within minutes.
Anything gluten-free or lighter?+
Yes. Every smoked meat and most sides are naturally gluten-free — skip the bun and the cornbread. Rubs are salt, pepper and spices; no flour, no fillers. Ask at the window and we'll walk you through it.
Can you park at my private event?+
That's our favorite gig. The truck needs a flat spot about the size of two parking spaces and nothing else — we bring our own power and water. Use the catering form above and mention it's truck-on-site.
What happens when the weather turns?+
The smoker doesn't care about rain, and neither do we — we serve unless it's genuinely unsafe. If a stop ever cancels, this page and Instagram update by 9 AM that morning.
